Typically named after the Swiss town of Gruyeres, Wisconsin cheesemakers produce award-winning, handcrafted Gruyere using classic production techniques and handcrafted copper vats. The cheese is aged in specially designed curing rooms, where it is kept damp with salt water to continue the surface ripening.
