Cheddar Thumbprint Cookies
1/2 cup (1 stick) butter, softened
1/4 cup packed brown sugar
1 large egg yolk
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
8 ounces Keystone Farms Cheese Aged Cheddar cheese, shredded (2 cups)
4 ounces Keystone Farms Cheese preferred fruit - infused cheese (1 cup)
1/4 cup finely chopped walnuts, optional
2/3 cup fruit jam of choice
1 Heat oven to 350°F.
2 Cream butter and brown sugar in a large bowl until light and fluffy. Add egg yolk and vanilla; beat until mixture is blended.
3 Combine flour and salt in a separate bowl; gradually add to butter mixture, mixing just until combined. Stir in cheddar. (Take care to not overmix.)
4 Shape dough into 1-inch balls. Roll in walnuts if desired.
5 Place 2 inches apart on parchment-lined baking sheets. Press an indention in the center of each with your thumb or handle of a spoon. Fill each with 1/2 teaspoon jam.
6 Bake for 11 -15 minutes or until edges are lightly browned. Remove to a wire rack to cool completely.
