Spiced Brandied Cherries with Aged Cheddar

Ingredients

2 cups sugar
1 cup water
7 whole cloves
4 cardamom pods
3 cinnamon sticks
3 whole allspice
1 vanilla bean, split
1 1/2 cups brandy
1 1/2 pounds pitted fresh or frozen cherries, thawed
4 ounces Keystone Farms Cheese 15 year Sharp Cheddar cheese
4 ounces Keystone Farms Cheese Cherry Infused Cheddar cheese
Assorted crackers


Instructions
Combine the sugar, water and spices in a large saucepan over medium-high heat. Bring to a boil, stirring frequently. Reduce heat to low. Simmer, uncovered, for 10-12 minutes or until mixture is slightly thickened, stirring occasionally.
Remove from the heat. Stir in brandy.
Place cherries into jars. Gradually pour syrup over cherries. Cool to room temperature. Cover and refrigerate for at least 2 days before serving. Serve with 15 Year Aged Yellow Cheddar and Cherry Infused Cheddar and crackers.
