2 cups sugar
1 cup water
7 whole cloves
4 cardamom pods
3 cinnamon sticks
3 whole allspice
1 vanilla bean, split
1 1/2 cups brandy
1 1/2 pounds pitted fresh or frozen cherries, thawed
4 ounces Keystone Farms Cheese 15 year Sharp Cheddar cheese
4 ounces Keystone Farms Cheese Cherry Infused Cheddar cheese
1 Combine the sugar, water and spices in a large saucepan over medium-high heat. Bring to a boil, stirring frequently. Reduce heat to low. Simmer, uncovered, for 10-12 minutes or until mixture is slightly thickened, stirring occasionally.
2 Remove from the heat. Stir in brandy.
3 Place cherries into jars. Gradually pour syrup over cherries. Cool to room temperature. Cover and refrigerate for at least 2 days before serving. Serve with 15 Year Aged Yellow Cheddar and Cherry Infused Cheddar and crackers.
