Summery Cheese Curd Macaroni Salad
2 cups uncooked elbow macaroni
2 packages (5 ounces each) Keystone Farms Cheese Curds, coarsely chopped (about 2 1/2 cups)
4 fully cooked bratwurst links, halved lengthwise and sliced
1 cup diced sweet pickles
1 cup diced red onion
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon sweet pickle juice
2 teaspoons sugar
1 teaspoon hot pepper sauce
Salt and pepper to taste
Minced fresh chives, optional
1 Cook macaroni according to package directions; drain and rinse in cold water.
2 Combine the macaroni, cheese curds, bratwursts, pickles and red onion in a large bowl.
3 Whisk the dressing ingredients in a medium bowl.
4 Season with salt and pepper to taste. Pour the dressing over macaroni mixture; gently toss to coat.
5 Cover and refrigerate for at least 1 hour or until serving. Garnish with chives if desired.
