Surface-ripened or monastery cheeses were an important source of protein for the monks who developed them. Their robust flavors were cherished since, at that time, spices were rare. Limburger is the most famous of all Belgian cheeses, and was sold in the town of Limburg. Today, a single cheese plant in WI, produces all of the Limburger made in the U.S.

Try it! You will like it! Fresh is best.

Delicious as a snack on crisp rye crackers, ground mustard, thin-sliced red onion, and some Fat Squirrel from New Glarus! Or as a meal on dark rye.

Love the cheese. Not the shipping cost. Not going to do that again!
